*Disclaimer- this was my first time canning, so if I didn’t do something right, ignore it!!*

Sweet Jalapeño Relish
(a not so hot version)

To start, I don’t like hot, nothing hot, extra mild picante is pushing it!! However, I do love the “flavor” of jalapeños, just not the heat! So, I cleaned, and scraped, and cried, and coughed and sneezed through 3lbs of jalapeños to make sure there was very, very little heat left in them, I’m not sure which is worse, eating something hot or eliminating the hot..Before I forget -DO NOT FORGET TO WEAR GLOVES and DO NOT TOUCH YOUR EYES OR NOSE, because it is guaranteed to itch, just push through!! Ok, now back to the heat, if, you like heat then you can leave all the seeds and whiteness in the jalapeños, or only leave a little- it’s your prerogative..

Ingredients

3 pounds of fresh jalapeno peppers diced/sliced/processed- you choose

6 cups of sugar

2 cups of apple cider vinegar
1/2 teaspoon of celery seed
3 teaspoons of pressed garlic

• First off, put your gloves on, remove the stems from the jalapeños, clean and slice, run through a food processor, -wash your hands throughly- then set aside.
•In a of kind large stock pot, combine the sugar, vinegar, celery seed, and garlic, bring the brine mixture to a boil. Reduce the heat and allow the mixture to simmer for 5 minutes. Now this is important- add the diced/sliced/processed jalapeños to the brine, allow the mixture with the jalapeños to simmer for 4 minutes…no more, no less. Remove the jalapeños from the brine with a slotted spoon or something to let the brine drain away, now place the jalapeños into your clean, sterilized canning jars, I use a handy canning funnel, works amazing, and they’re cheap, buy one..
• Ok, so now turn the heat up on the liquid (brine)mixture and bring it to a full, rolling boil. Boil on high for 6 minutes.
• Using a ladle, pour the VERY HOT syrup into the jars over the jalapeños. Leave enough space so the jars will process properly. You need to use something nonmetal to release any trapped air pockets in the jars. I used a wooden skewer and it worked great, then tossed it- easy clean up. You then could add more syrup to the jars if needed.
•Wipe around the rims of the jars if you made a mess, then place the lids and bands on the jars, process the jars in a hot water bath for 10-15 minutes. The water should be about 2 inches above the tops of the jars. When your water is rolling boiling then start your timer, but not until then..once your time is up, remove the jars, place on a towel, upright on the counter, do not disturb for 12-24 hours- then in 2 weeks- ta da you have sweet jalapeño relish!!

Weekly Dinner Menu

ImageMy menu for the week that I’m going to attempt to stick with, but with baseball and life sometimes I get a little off schedule!

Monday:(I know I’m a day late)  We had Salmon Patties and Macaroni and Tomatoes- didn’t go all out, kept it easy, yet unfortunately- stinky!

Tuesday:  Tonight, Steak, Baked Potatoes from I wash you dry, and Homemade Mac N Cheese(per E’s request) with spiral noodles, and a salad. I have my steaks marinating right now at home in Allegro’s, love ithis stuff, if you haven’t tried it, do it!

ImageWednesday:  This is my BIRTHDAY, so guess what – I’m not cooking, we’re going out!!!

Thursday:  We’re having Balsamic Grilled Chicken, from Rich and Sweet, Pasta Salad(out of a box), and Crash Hot Potatoes - I know lots of carbs, but we have ANOTHER baseball game…

Friday:  We’re going out to dinner with some friends, plans are to head to a little local joint that has THE BEST fried chicken…

Saturday:  Baseball. All. Day- doubt there will be time to cook, may have to throw something together last minute, I’ll cross that bridge when we get there, if so, maybe Stomboli – it’s easy..

Sunday:  I haven’t totally decided yet- this is typically my buy grocery/menu plan day, but I’ve been hungry for Lasagna, so this might be the day for that…oh, and homemade French bread(in the bread machine)

My Menu(better late than never)!! 11/26/12-12/1/12

Well, I have been MAJORLY slacking on posting my weekly menus, I have done them but have not posted…Secondly, in my defense I have a ridiculously crazy schedule that doesn’t allow too much “extra” time!!  So, here’s my menu for this week, next week is stiff iffy, but I will try to do my best!!

Monday:  This one’s easy- we ate out!!  I just didn’t wanna cook!

Tuesday:  Baked Cheese Tortellini, french bread, and a salad

Wednesday:  Baked Chicken Fajitas and all the fixin’s

Thursday:  Plantation Supper  – this is something I had never had until marrying my hubby..

Friday:  Dorito Casserole and some for of side, probably rice and something else

Saturday:  Fried Chicken, Mashed Potatoes, Corn, and Mac N Cheese

Sunday:  I don’t know yet!!!!

Sunday:  Steak Fingers, Mashed Potatoes, Mac N Cheese, Green Beans and Baked Apples with Vanilla Ice Cream

Monday:  Ranch Pork Chops, Baked potato, Steamed veggies

Tuesday:  Lasagna, Salad, and French bread

Wednesday:  Beefed Up Taco’s with Avocado Corn Salsa and Apple Enchiladas

Thursday:  Left Overs!!!

Friday: Crescent Cheeseburgers and Homemade Chips

Saturday: Mexican Chicken Casserole and Spanish Rice

Sunday:  Parmesan Tilapia, Steamed Veggies and Risotto

I haven’t sent out a menu in awhile, so I thought I would today, I kind of miss doing it, keeps me on track a little more, and man do I need that!!

 

Monday:  Steak, Loaded Mashed Potatoes, Cream Cheese Corn, and a salad

Tuesday:  Taco Salad and Veggie Quesedillas

Wednesday: Roasted Chicken with Balsamic Bell Peppers and Zucchini boats and rice..

Thursday:  Tortellini With Beef Tips (JN’s request) and a side dish…

Friday: Sauteed Chicken and Tomato Pasta

Saturday:  Hopefully having dinner with long lost friends!!

Sunday:  Chicken Cacciatore, french bread and a veggie…

Monday:  Once again tonight I’m going with JN to a roping, so no cooking for me!

Tusday:  Sauteed Chicken and Tomato Pasta and a salad

Wednesday:  Baked Pork Steak, steamed broccolli and cauliflower, and twice baked potato casserole

Thursday:  Parmesan Tilapia, rice, and stir fry asparagus veggies

Friday:  Taco Salad and quesadillas

Saturday:  Mexican Bubble Casserole

Sunday:  Pot Roast – In my new, but REALLY old cast iron dutch oven – I’m excited about this…
